Surprise Inside Mini Pumpkin Cupcakes for #HersheysHalloween

I think I've said it probably a million times, but I love love love Halloween. I love decorating for Halloween, I love haunted houses and scary movies, I love making Halloween snacks and treats, and I love trick-or-treating. Well, I love taking my kids trick-or-treating.

I received a fun box of Hershey's goodies to do whatever I wanted with - except for just eating it straight out of the box without sharing. Because that's what I really wanted to do with all of this:

One thing that caught my eye was the Hershey's Kisses. They are my all time favorite, and I love the festive fall-colored wrappers. Perfect to set out in a candy dish or jar. But then I saw the second bag of Hershey's Kisses - Pumpkin Spice flavor. What?!

I knew that I had to do something with them. Something with lots of pumpkin goodness that would compliment their flavor. Something cute enough to bring to a friend's house to share with lots of pumpkin spice-loving ladies. I went to the store and raided the Halloween baking supplies and came up with a super fun recipe.

How stinking cute are these?!?! I love the way they turned out, looking like bite-size little pumpkins. Canned pumpkin and a generous helping of pumpkin pie spice make these cupcakes the perfect companion to the kisses. And a simple cream cheese frosting dyed orange and topped with a tiny slice of green sour belt candy completes the pumpkin look.

They're super easy to make, with plenty of opportunities for kids to help out too. My favorite thing to have the kids help with is unwrapping the kisses. Because, they are way more excited to unwrap 40 Hershey's Kisses than I am.

This recipe made 42 mini cupcakes for me. If you are careful with the batter you could probably get a full 4 dozen out of it. I tend to overfill when I bake, though.

Surprise Inside Mini Pumpkin Cupcakes

  • 1 and 3/4 cups of flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 Tablespoon pumpkin pie spice
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 cup canned pure pumpkin (or cooked pureed pumpkin)
  • 1/2 cup oil (vegetable, coconut, canola, etc)
  • 1 teaspoon vanilla extract
  • 1 package of Hershey's Pumpkin Spice Kisses
  • 1 package regular cream cheese (room temperature)
  • 2 Tablespoons of milk
  • 1 teaspoon vanilla extract
  • Orange food dye
  • 1 1/3 cups powdered sugar
  • Green sour candy belt sliced into small slivers for stems

Start by preheating the oven to 350ยบ and putting your cupcake liners in your pans so that they're ready to go.
In a small mixing bowl, sift together your flour, baking soda, baking powder, salt, and pumpkin pie spice. Set aside.
In a larger mixing bowl, whisk together (by hand or with mixer) your sugar, eggs, milk, pumpkin, oil, and vanilla. 
Slowly add your dry mixture into the wet mixture until completely combined.
Place a small dab of batter in each cupcake liner and press unwrapped Hershey's kisses in.
Fill with batter to cover the candy.
Bake for 12-14 and let cool.
While cupcakes are cooling you can mix up your frosting.
With a hand mixer or stand mixer, whip together your cream cheese, milk, and vanilla. 
Mix in your dye until you reach your desired color. 
Add powdered sugar 1/3 cup at a time until completely combined.
Frost cupcakes and stick a small sliver of sour candy belt into the top to make a stem. 

These cupcakes are a lot of fun to make, and even more fun to eat. Perfect easy treats for a Halloween gathering, or just because. My kids loved helping me make them, and of course they loved helping eat them too. I left some un-frosted and without candy for the baby and he loved them too.
