I posted this picture on Facebook, and one of my friends thought I was at a restaurant! No sir, I made these right at home.
The funny thing was, I didn't really make any plans for dinner. I don't like being unprepared, so I threw a pack of chicken breasts in the crock pot with salsa on top. I figured I'd know what to do with them later, and I did!
When they were fully cooked, I poured out almost all of the liquid and then shredded them up with the salsa that was left on top, resulting in a non-mushy shredded chicken.
I wasn't sure what I would do with them, but I remembered something I saw on Pinterest. Baked taco shells, right on the oven rack. I just happened to have a package of corn tortillas, so I made a bunch of those.

Last but not least, I wanted something to top them with. Cheese didn't sound good, and I was all out of lettuce and tomatoes. I did have a bag of broccoli slaw that I picked up the day before, though! I simply mixed half of the bag with one (big) lime and half a bunch of cilantro, and a little salt too.
These were the best tacos I've had in a long time, and I didn't have to feel guilty about eating FOUR of them!
