
I would say that's a pretty accurate description of me, and it sounds like a fantastic dish. I will definitely be trying it on my next visit.
Coming from an Italian family, pasta is something I feel like I know a lot about. It can be a very fancy special dish for when we have dinner guests over, or it can be a simple and fairly cheap go-to dinner dish.
My go-to pasta dinner dish is definitely on the simple side. Better yet, it's healthy, kids love it, and it's cheap because I don't even add meat. You could always add some browned ground turkey, chicken, sausage or beef, but sometimes I like to skip the meat.
Ingredients:
-2 small zucchini, shredded
-2 medium/large carrots, shredded
-1 medium yellow onion, diced
-1 package of sliced mushrooms (optional)
-4 cloves garlic, pressed or chopped
-1 14.5oz can petite diced tomatoes
-1 8oz can tomato sauce
-1 6oz can tomato paste
-1T Italian Seasoning
-2T Agave nectar or sugar
-salt and pepper to taste
Directions:
Saute the carrots, zucchini, onion and mushroom in a small amount of Olive Oil until softened. Add garlic and saute for 2 more minutes. Add all the tomato products and seasonings. Cover and let simmer on low for at least 30 minutes. Serve over your favorite pasta. We like it on Angel Hair the best, with a sprinkle of Parmesan on top. Yummy!
This recipe is my go-to because of how simple it is, and how much my kids love it. I struggle to get my youngest to eat a variety of vegetables, but when I make this recipe I know I won't have to worry about him. And even though I made it with kids in mind, it still has a great taste and textures that grown ups love too. And I almost always have the ingredients on hand, so it's a life-saver when it's 5:00pm and I have nothing ready for dinner.
